The district in plain terms
The centre is the brick and water between Centraal Station and the Amstel. Damrak runs south from the station to Dam Square and the Royal Palace, Rokin carries on to Muntplein, and three canals, Herengracht, Keizersgracht and Prinsengracht, wrap the whole thing in neat arcs. East of Damrak you find Nieuwmarkt and the old harbour edges. West of it sit the Nine Streets, which is where the better small restaurants and the better small shops have collected. Spui handles the evening quietly. Rembrandtplein and Leidseplein do not.
Where the hotels are
Three clusters matter here. The first is the corridor between Centraal Station and the Dam, large houses with large lobbies and a steady traffic of luggage. The second is the canal belt itself, where seventeenth century merchant houses have been converted room by room, with narrow stairs, small lifts and a front desk that is often one person at a table. The third gathers around Rembrandtplein and the Amstel, later and louder at street level.

Most bookings in the centre are straightforward. A drink somewhere with a quiet corner, a table where conversation is actually possible, and a short walk back. The Nine Streets and the Spui side are built for that. Rembrandtplein suits a later and noisier night if that is what you came for. If you want to spend twenty minutes outdoors, the Herengracht after nine is the best free thing in the city, lit water, almost no traffic, and ten minutes from wherever you are staying.
